Blueberry Loaf

    Well, September has arrived! It is a perfect day to enjoy some homemade blueberry loaf.

    I doubled the recipe to make two loaves, one loaf to enjoy now with family and a second loaf for the freezer. Lately I have tried to put some of my baking in the freezer so we don't inhale calories so quickly. This loaf is a bit like a pound cake, very moist and delicious.


    Below is the recipe from allrecipes dot com, if you are interested. From the reviews and my own experiences I would suggest you test the loaf at 55 minutes, but it takes more like 60-65 minutes.


    Blueberry Loaf Cake
    Ingredients:


    1/2 cup butter or margarine, softened
    1 cup sugar
    2 eggs
    1/2 cup milk
    1 teaspoon vanilla extract
    1 3/4 cups all-purpose flour
    1 teaspoon baking powder
    1 cup fresh or frozen blueberries
    TOPPING:
    2 teaspoons sugar
    1 teaspoon ground cinnamon


    Directions:


    In a mixing bowl, cream butter and sugar. Beat in eggs, milk and vanilla. Combine flour and baking powder; add to creamed mixture just until combined. Gently fold in blueberries. Pour into a greased 9-in. x 5-in. x 3-in. loaf pan. Combine sugar and cinnamon; sprinkle over top. Bake at 350 degrees F for 50-55 minutes {or 60-65} or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

Blueberry Apple Crisp

    I know it is not Fall, but I love making crisps year round!

    I decided to make blueberry apple crisp for an after dinner treat on this long weekend.


    Delicious and bubbly and served with vanilla ice cream on top. So easy to make that I don't even use a recipe any more. And a great way to get my boys to eat more fruit. So good that they wouldn't wait for photos out of the oven.
